The Danes Nuts

Last year we were very lucky to have a friend from New Zealand visit for a few days.  She turned out to also be BBB's first babysitter which was incredibly good timing for us to head out and enjoy a bit of Dirty Dancing.  The musical.  Not a Danish Swingers Club (but, yes they are a thing).

During her visit the Dane got out his best nuts and made Nut Bread.  I promised the recipe to the babysitter but never delivered....my apologies. 

So instead here it is now.  To share with all.  Packed full of nuts its high in all the good fats and low in carbs.  At least that's what I've been told.  Keen to get your take on it though.

It makes a great mid afternoon snack with a smear of butter and chocolate (refer rule #5) or cheese on top.

Nut Bread - Ingredients

750 grams of nuts and seeds (ie. Linseed, Sunflower, Pumpkin, Brazil nuts, Pecans, Hazelnuts, Almonds, Walnuts......whatever)

4 eggs

100 grams grated cheese

1 tbsp Olive Oil

Method

Mix all ingredients together.  Put into a greased loaf tin.  Press down and make smooth on top.  Bake for 1 hour at 160c.

When cool slice thinly as required and spread with topping of your choice.  Perfect with a cup of coffee.

Slice thinly and add your topping of choice - enjoy!
